BARBACOA ~ ☀️☀️☀️ Please excuse the lack of fresh lime in this photo, as I’m sure you’re well aware keeping fresh produce around is a STRUGGLE - but I think you should def. serve your barbacoa with fresh lime 😈😈😈 This meal was unexpectedly amazing. I’ve had this Sirloin Tip roast in my freezer forever and thought there was no better time than now to bust it out and marinate it as creatively as I could with some basic pantry ingredients! (peep my story) I served these over corn tortillas with salsa and black bean hummus (another really great condiment you can make quickly when fresh groceries are limited!). I reeeaaallly hope you try this sometime soon because it’s perfect for summer, and totally NO FUSS. Recipe below!! . Barbacoa Tacos ☀️ • 2 lbs beef roast (I used Sirloin Tip Roast) • juice from half an orange • one apple • one onion • 3 cloves garlic, grated • 1” fresh ginger, grated • 2 tbsp soy sauce • salt, onion powder, cumin, cayenne and cinnamon to taste • 1/2 cup olive oil • 1 cup bone broth - Bring meat to room temperature (usually takes about 40 minutes sitting out of the fridge if already completely thawed.) - Pat meat dry with paper towel, apply salt generously, and set aside - add all ingredients except bone broth to a bowl and incorporate. Pour half of marinade into crock pot, lay roast into the crockpot, and pour remaining marinade over roast, using a pastry brush to evenly apply if necessary. - Pour bone broth into crock pot, cook on high for 5-7 hours and reduce to warm. Saturday Brunch compliments of @patrick.resendiz my main squeeze 💛💛💛 Omelette (local eggs, a little water and whisk) Diced Yellow Pepper Diced Asparagus Cooked in coconut oil Celtic sea salt Kale (steamed) Sprouted Sunflower Seeds Instant pot leftover potatoes turned into breakfast potatoes (cooked in cold pressed, unrefined coconut oil add celtic sea salt). Some variation like this is always in rotation for any meal for our family. It’s easy, cost effective and fairly quick to throw together. TIP** To make meal come together quicker prep some veggies a few days at a time and you could even have an egg mixture mixed ahead of time and pour what you need out. TIP** Ask kids to help cut veggies like peppers, asparagus, zucchini are easier for kid’s knives rather than carrots for younger kids. Our kids love to help prep food with us in the kitchen, we are still working on the clean up portion of cooking but hey I’ll take the extra time with them in the kitchen and they tend to eat the things they help prepare!!
